Garden update: One of my first blog entries was about wood sorrel. I love the dark and light contrasting colors of the purple shamrock variety. I found it again at the stand so I picked up two the other day. I also picked up a red bell pepper plant today to replace the one I lost in the hail storm we had several weeks ago. Other than that, my herb and vegetable gardens are thriving. I haven’t used a whole lot of herbs yet for cooking because I know once I start I’m going to want to use some everyday. I’m letting them grow for a while so I have a nice steady supply. A swallowtail butterfly caterpillar helped me use up my dill, actually my little friend ate it all lol. The caterpillars are welcome in my garden anytime though simply because they are gorgeous, I mean look at those colors!
Yesterday we went to the PA Vegfest. I had so much fun trying new foods and walking around looking at everything. It was cool that I was familiar with a lot of things already from watching youtube videos lol. Plus it was a nice way to celebrate going vegan last April. I found some nice vegan products to try out and a couple of cute t-shirts. 😉 The food was amazing! Hubby tried a vegan burger which was really yummy. We also tried some west African foods. We had rice and beans with caramelized onions, bean and veggie salad with cilantro, and iced ginger drink. I’m in the process of making my own ginger drink tonight. After reviewing some recipes online, I came up with my own version. I’m using fresh ginger, ginger mint, pineapple, orange, lemon, lime, and honey. I’m not going to make it really strong or sweet. I’m just going to wing it. Anyway, we also had vegan cupcakes and I forgot to take pictures of them. I can’t wait to go back again next year!!!
