Roasted Veggies & Rotini


I started the week off with this delicious roasted vegetables over pasta dish for dinner.  All of the ingredients came from my garden and local produce.  This beauty is cherry tomatoes, yellow squash, sweet onion, bell pepper, basil, oregano, garlic, red pepper flakes, olive oil, salt & pepper.  Roasted and served on top of Rotini pasta.  This turned out so good and I had fun making it!
