Minestrone Soup & Movies

Today was the coldest day so far this winter.  We stayed home to do some house cleaning and I made Minestrone Soup.  It was 15 degrees out at 5:30 when I made this soup.

There are many ways to make a minestrone soup.  I used carrots, celery, onion, garlic, red bell pepper, fresh cherry tomatoes, red & black beans.  And for the seasonings I used vegetable broth, garlic & onion powder, basil, parsley, red pepper flakes, bay leaf, salt and pepper.  I had fun taking pictures while I was cooking because I actually enjoy doing three things at once…

I love making meals where you just chop and drop everything into one pan.

Then just add water…

I will try this with chickpeas next time.  I’m saving them for my chickpea curry.

Give it a taste test, add more salt if needed, and go easy on the red pepper flakes.  You can always add more…

Lid it and simmer.  I cooked a pork chop for hubby and a field roast sausage for me.

And of course you can’t have soup without fresh bread…

We needed something chocolatey to have because of the one movie we rented from the library.

We also saw a good movie recently called Ricki and the Flash with Meryl Streep.
