I have been enjoying making plans for our trip to finish visiting all of PA’s State Parks. I looked up each park we plan to visit on the PADCNR website and wrote down all of the cool things to see. Hopefully we will get to enjoy most of the interesting things I found out about. I will definitely write about our adventure here when we return.
I have been trying out some tofu recipes lately and wanted to share them. When I first ate tofu like eight years ago, I heard about a chocolate pie you can make with silken tofu. Well I finally made one and I really like it, especially with graham cracker crust! Here’s the recipe if you’d like to make your own:
I also have been making really yummy salads for hubby and I. I’ve been using my favorite dressing:
I added chili powder to the dressing today since we were having beans, avocado, and cilantro… Hubby’s salad looks prettier because I have been using a big bowl for mine. Ever since I had a Buddha bowl at Brews N’ Bytes I’ve been making them at home. Hubby doesn’t like tofu so I used red beans for his salad. He doesn’t like cilantro either. Really our salads were very different lol, but any salad is tasty with this dressing no matter what you use.
For the tofu I used salt, pepper, garlic powder, red pepper flakes, parsley, and olive oil. I baked it at 375 for about 30 minutes. Tossing them halfway through. I even used chives from the garden, yay!
We try to go for walks as often as we can. Today I took a picture of the virginia blue bells that are coming up along one of our walking paths. It was sunny out today but much cooler.
And my cats are loving their boxes and the sunshine… ❤
